Lamb and noodle hot pot

Our Healthy Food Winter Menu includes delicious, nutritious recipes designed to fuel growing minds and bodies. Assisting Educator Melanie Ellis from Aussie Kindies Early Learning Torquay shared this recipe which has been a favourite with the children, and we’ve adapted the recipe so it suits a family-sized portion. 

This recipe serves 4 people.

Ingredients

  • 35g chopped onions

  • 1/4 cup (cubed) of pumpkin, diced

  • 35g chopped celery chopped

  • 100g frozen peas

  • 110g diced or grated carrots

  • 55g granny-smith apple, skin on, diced

  • 150g wholemeal pasta, cooked and drained

  • 300g lean lamb, cubed

  • 30g tomato soup (concentrate, not ‘ready to eat’)

  • 1 tsp of curry powder

  • 100g of beef soup (ready to eat)

  • 1 tsp oil (sunflower, canola or olive)

Method

  1. Lightly brown the lamb and onions in the oil.

  2. Add all the other ingredients except the pasta, to the meat.

  3. Bring to the boil then reduce the heat, place the lid on and simmer gently until the meat is tender. About 1 hour.

  4. About 30 minutes before the meat is finished, cook the pasta.

  5. Cooked pasta can be stirred through the meat once the meat is cooked or, it can be served separately.

  6. Serve: serve with salad.
